Plywood replacement panels are a great idea. Luann (mahogany) plywood ¼" is about the least expensive plywood you can buy and it will "finish" beautifully. If you wanted to spend more, birch plywood is readily available, too. Save the old panel pieces you remove and use them for templates. The plywood can be painted, stained, papered or left unfinished. The problem with "repapering" the panels is during humid and dry extremes, the paper tends to expand and contract.
