I always use a wrench on the nuts from above and I've found that the tension placed on the bolts by the clutch pushing the slave cylinder up as you loosen the nuts plus a finger on the bolt head will keep the bolt from turning as you loosen the nut.

But again, getting the thing back in is more of a hassle.
