Actually I think this one makes sense. In the 'conventional' setup: "off"->"low"->"high" I almost always kill the flame when reducing the heat in a hurry (over boiling hollandaise, I love asparagus...) With the setup in the Westie stove you just slam it left an it will stop at the the minimum, without extinguishing.
