Really easy, huh? I have an '81 Vanagon, just like yours Sean, and I always drop the engine and tranny as a unit. I find that disconnecting the slave cylinder from the tranny is the major source of pain... there's no easy way to get a wrench on those bolts from underneath! I finally replaced them with allen-heads but even that isn't much help. I have typically spent more than an hour trying to loose those damnable bolts!

When you say it's easy, are you talking about dropping the engine and tranny separately?
