On my Vanagon there was only one battery and the frig ran off it only when the vehicle was running. Am I correct in gathering that, in the EVC, it runs off the auxiliary battery but still only when the engine is running?

The EVC can run off the auxiliary battery with the van running or not.

Without the van running, you can drain the battery in four or five hours.
