Yes, VW makes a 2-person center seat that basically looks very similar to the back seat. Black brackets to hold it should be visible in your floor. It's heavy, but reasonably easy to snap in and out when desired. It blocks the fridge, so it's probably not useful when camping. Actually, most Eurovan campers that I've seen for sale have included the center seat. I think list price is a few hundred dollars - maybe a VW dealer could get one for you.
