Check to see if the radiator fans are cycling on and off.
Make sure that both high and low speeds are working
as well.


Sounds like only the low speed is working at this time.
By driving all day you're getting enough airflow past
the radiator to keep it cool.  But, on short trips in town
at slower speeds there isn't enough air past the radiator
hence the boiling and low coolant temp light.
