The 16 amp fuse is for the D/C portion of the Fridge. It is feed by a relay under the seat. The relay is energized when the alternator is actively charging,(ignition on, alternator warning light off). Its wired this way to disconnect the Fridge in case of alternator failure. The approximately 8 amp draw will drain the battery quickly.
