When I refurbished my 1980, I installed clear-lensed clearance lamps in all the cabinets as well as under the dash. They were cheap and indestructible so you never had to worry about busting a bulb and made fishing around for stuff in the fridge or drawers/cupboards at night a WHOLE lot easier. I used "compression switches" to activate them upon opening a door. The under-dash ones made finding dropped keys at night a breeze as well, and were hooked to the overhead light which were activated by opening the doors. As for map/reading lights, I grabbed a bunch of luxury dome/map light sets out of some old caddys at a local junk yard and installed them in the ceiling panels. They looked and worked great.

I can't recommend taking the time to do such a customization enough. It will really set your van apart from the rest and make your life a lot easier.
