Here is the list of the differences in options on the Multivan, that are not on the Carat, (As per the information listed the www.vanagon.com website):

Only on the Multivan:

C. Exterior, body Clearcoat metallic paint Height: 80.9"

D. Interior

Air conditioning with outlets in rear only Removable screen for hatch door Two person overhead sleeping loft Rear clothes locker

Only on the Carat:

C. Exterior, body

Paint choices: Pastel White, Orly Blue Metallic, or Bordeaux Red Metallic (burgundy) Height: 75.9" / 1.93 meters

D. Interior

Digital LCD clock Air conditioning with outlets in front & rear

I think that their might be screens on the Multivan windows too. There may also be some styling changes too. I'd be happy just to find a "overhead sleeping loft" kit for a Carat!
