To replace the light bulb for illuminating the digital clock, you need to first remove the instrument panel cover (pull toward the driver seat from the windshield-side of the panel - finger holes on either end), then the instrument panel itself (4 screws).

The bulb is located on the small ciruit board for the clock. It is a twist-to-remove blub. Part #2722MF8 and is 12v 2 watt. Your best bet to find replacement bulbs is a VW dealer, I've not found them anywhere else. Buy a few spares, these bulbs are used in various other dashboard-related locations.
