There is also a hand-operated vacuum pump designed for amongst other things, brake bleeding. Our local Grand Auto has them for around $40.

I have not tried one yet, but it looks like an easy way to get the job done and done well.

Brake fluid should be changed every two years, as it absorbs water and becomes corrosive, and will boil at a much lower pressure than when new.

NEVER use DOT 5 silicon fluid in VWs, every source I've seen, including the Official Bentley manuals make this very clear.
