Any opinions on the best highway (rain) tires for an '85 Weekender that's loaded down like a Westy with dual Yakimas on the roof?

When I had a '91 Westy, there was a Michelin MX L that was designed specifically for Westies, but I understand they are no more.

I put light truck tires on ~21K ago but the tread isn't good enough for another winter (Portland, OR).

Also, any opinions on tire pressure? The sticker on the door frame states 48Lbs Rear & 40 Front. I remember reading something about a recommended change to 40 R & 30 F.
