I suppose this is the obvious answer, but we just bring along a separate portable propane stove. A two-burner model fits easily under the rear seat, or in our box on the roof rack. One-burner models can be as small as a hardback book. Both are cheap - maybe between $10 and $50. I'd reccomend this route rather than trying to modify the existing stove.

If you're determined, though, you could probably completely remove the existing stove, cut a big "well" where it used to be, put a suitable fitting on the gas line, and drop in a portable stove. I've heard of some camper conversions that come that way from the factory. I doubt it'd be worth it just to save the little bit of storage a separate portable would take. Besides, the Westfalia stove seems to be very high quality, and I'd hate to lose it.
