Having more oxygen in cooler more condense air is actually an incidental reason for the intercooler. The desiel engine is a classic heat engine and efficiency of the ideal heat engine is proportional (not linearly though) to the temperature difference between the input side and the output side. Thus by keeping the incoming "energy source" cooler we can get more "work" out of the engine ,ie., a more efficient engine.
