I carry one of those stovetop toaster racks. It is a simple metal plate with a folding rack: about $3 from Wal-Mart. I like to have toast for breakfast and it gives me something to do while my:

Stainless Steel Coffee Percolator is brewing on the other westie burner.

I always keep a Stainless Steel Thermos to store the coffee in as well. Most roadside gas stations that serve coffee will let you fill up a quart thermos for $1 or $2 and often I don't need to even bother with brewing it myself.

I found a dirt-cheap "hibachi" thingie that had a round grill. It came packed with some impregnated charcoal bricks for one-time-use... bought it from Wally Mart too. Nice thing about it is the round grill fits perfectly over the Westie grill and holds smaller pots that the Westie grill can't because of the large gap in the middle of the westie grill rack.

And I packed a small olive jar with hand cleaner in case of roadside mechanical encounters.... works great with the sink right there.

I use the front table leg as a paper towel holder... lift the table leg up and slip it through the paper towel roll then put it back in the holder bracket... works great with paper towels always handy even when driving and acts as a pad to keep you from knocking your shins on the table leg as you pass from front to back.

And I have a Theford porta pottie...about $50 ..but worth every penny! It's so nice to not have to get dressed and walk out in the cold to use the toilet in the middle of the night. I usually only use it for urine... and it is smell free. If you get the smallest one, it will slide under the bed when it's folded out and won't take up any floorspace. Normally I store it on the floor behind the battery/pasenger seat when underway; my westie has convienient strap anchors there to secure the unit with a loop of twine.
