I briefly looked into doing the same thing. What I found was this; the table and its associated side panel are held in at the top by a metal'j' channel which is rivited to the body, the bottom is screwed into the body. It appeared to me that the rivits could be drilled out and new pop rivits installed providing you the coveted table. It seemed the side panel from the non-weekender model could be put in place using the vw original clips and mounting points. You will have to remove teh rear seat to carry out this project.
