Seth, I don't own a water cooled, but I imagine the trick would be just like living in the hot climate: start early and get the hard work done in the morning before gets really hot... plan to be under a shade tree in the afternoon. Tips for New Mexico: Taos.... especially the Indian reservation (the oldest occupied dwellings in the U.S. I believe... 400 years and very scenic) and the museums.
