Mike, you asked RE fridge fans:

<< The outside ones seem pretty straightforward, but the little one inside puzzles me. How do you control the power? Do you need to put in a switch to turn it on or off? Is there someplace in the refrigerator circuit where you can get power only when the refrigerator is chilling? >>

I use a muffin fan which sits on wasted space at the top of the cooling fins on the right side. Glued some slip-stop to it which keeps it in place and reduces vibration. I draw 12 volts from the westy fuse box behind the driver's seat, concealed the wiring beneath the carpet and up the fridge door frame. Use a quick connect inside the box...simply unplug to turn it off.
