You can adjust the evaporator thermostat, if the capillary tube is still good. Immerse the capillary tube in heavily-iced water, and listen for a "Click" within a few seconds. If it clicks, it is good. Then, look closely at the two adjustments...one is for the temperature it turns off, one is for the "duration tolerance" or high temp tolerance. It sounds like the latter is out of adjustment. Of course the problem with removing the thermostat, is getting the capilary tube back in it's holder...I don't have a solution here. I am guessing this is pretty common failure, as my 14-year old Jetta had this problem, as did my sister's old Golf. This springs in that thermostat may get old or summpin. G.
