If you're saying that 1) by simply unplugging the connector at the thermoswitch and jumping terminals with no other changes at all, the fan works ok and 2) when you plug the connector back into the switch it doesn't work, and 3) the switch tests good (I think the high-speed switch is above boiling-water temp -- you could use oil instead), then I think you can be confident that either there is bad contact btw the connector and the switch, or that a wire (probably the supply wire, since it seems to affect both speeds) has broken in such a way that it loses contact when the connector is plugged in, but regains it when you have it unplugged for testing.
