While all this was happening and the engine was turned off, did you hear and "gurgling" in the rad or in the engine? Did the rad get hot or even warm to the touch? We had a hell of a time bleeding the system in our 84 westie - it would bleed and run perfect for days. Then wham! Overheat - the temp needle would go all the way up though, but this is an inline and not a boxer. When this happened the rad was stone cold and the return line to the thermostat was cold. Basically there was a small pin hole leak in the coolant resivior that allowed air to get in and an air pocket formed at the water pump... since we got the pin hole fixed no problems. Perhaps this is happening to you can your heater is acting like a rad and keeping the temp sensor "happy".
