It sounds like if the engine was in you'd jack up the rear by puting your jack under the sump and lifting up the whole rear end. Not a good idea since you tend to break engine mounts this way.

I've jacked up the rear end of my engineless van by jacking up one side and then the other, using jack stands on the side not being jacked. I've "stepped up" to the height I've wanted, going back and forth. Kind of slow, but sure!
