We were advised that the coolant sensor is very sensitive to the coolant/water mix. Also that water leaking on the sensor can cause it to malfunction.

We replaced the expansion tank and seal and added more antifreeze to the coolant. Nothing drastic and only $32 for parts. But everything is back to normal. Probably should order a new sensor too, though.
