Joe: Having several years ago converted an 82 to use in a 79(bass ackwards of your goal), let me try to recap what needed to be done.

The biggie is the heat exchangers, if your 79 isn't a fairly late 79, this swap will be expensive. I was fortunate that I had the later design square port exhaust flanges like the vanagon air cooleds had. Next you need to change over the fanhousing as the altenator is in a different spot as is the oil dipstick. Some one else will have to cover the FIend of it, I was running 44IDF Webers.
