One problem is the dip stick location in the 79 is through the case at the bottom right side and on the 81 it through the side of the breather tower. It is similar to the dip stick location on the 914 engine.

On my T4 engine in the 73 I added the vanagon style dip stick. I had to have the case drilled to accept the dipstick tube.

You might be able to use the oil fill tube from the 79 and use the 79 modified in some way.
