There are "sun shower" water bags that can be had in various sizes ranging from a small hand-held to 10 gallons. These are designed to be heated by the sun and are supposed to get quite hot with only a few hours exposure. They come with a hose with a shower head on the end. I believe there is also a small battery operated pump available as well. I have never used one but have seen several and they seem quite heavy and capable of being thrown into the luggage rack without leakage.

That's how the Adventurewagen does it. There's a 4.3 solar heated tank mounted atop its' fiberglass raised top. It is accessed through a moon roof hatch and a standard shower hose/wand can be attached. Came with a custom shower curtain and 24 quart Rubbermaid catch basin. The difference between my setup and what you describe for a Westfalia is that my tank is about 76" above the cabin floor. Your luggage rack lower and may not supply sufficient pressure when in a standing position.
