To our Canadian contingent...

The first major chili event was held at an unrestored "ghost" town in west Texas. Remember, Texas is a state of mind where Chili is a religion. Chile is a country, and a type of capsicum reference, Chili is gods own gift to be thankful for and to admire.

The town was Terlingua, the challenge was thrown by Francis X Tolbert of the Dallas Morning News if I recall to one of his friends to cook the best Texas Chili. The resulting contest and carousing went on for days. Read the full story in "Bowl of Red".

Carrol Shelby of AC-FORD Cobra fame took the initiative to make it a charity event and start the Terlingua Racing Team. The proceeds are all donated.

Chili Appreciation Society International (CASI) and International Chili Society (ICS) are the allegiances and the champeenships of the entire known world are held at...yep, Terlingua, TX and Newport Beach CAL. The prizes and prestige are very substantial.

Al (leatherlipped chili head) order of the humble pod, Chimayo NM.
