Ken, I've seen a laptop set up like you describe. I have a friend who is a regional trouble shooter mechanic for Mercedes Benz. He goes around from dealer to dealer fixing the cars that they cannot or will not. He gets a new MB company car every couple months to drive and to become familiar with the new models. One day he drove up in a SEL convertible with an IBM Think Pad laptop plugged into the cars computer with a special harness. With the laptop he could get every detail of what was going on in the engine-temp, RPM, CO content, oil pressure, everything. He said it was of particular value to him because it gave him specific details of engine operation when driving and under load.
