You have a problem that really can't be solved. Even camping in a tent in cold weather will produce a lot of condensation. Your body puts out a few quarts of moisture alone each day, and cooking will add to that. Ventilation and wiping down the metal and glass surfaces will help. Keep all wet items outside and go to the laundromat to dry things out frequently. If your electricity is cheap, keep that heater running all the time with the roof vent open some.

At night you may just have to pop the top and open up more ventilation to get rid of all the moisture you will exude, mostly from breathing. You will need a very good sleeping bag!

If you really want to get creative, go to Home Depot and get some styrofoam sheets and cut panels to fit over the canvas on the inside. Not foil faced, it will just condense more moisture. Then you can leave the top up and the roof vent open an inch or so.

Moving to a warmer climate is the only solution.
