Well, I didn't want to get into all that, but that's exactly why I chose to cut a hole in the roof of a perfectly good van to make it into a poptop. It was the only thing that I really wanted from the Westy.

We have a 12V cooler which we can load indoors from our fridge (works great with icepacks because it's insulated very well) and a chuckbox to carry all the kitchen stuff including a white gas backpacking stove. We still have the full- width bed, can add an awning, and we're good to camp. If I want to cook in the van, I just swing out the table and do it there. Otherwise, we like to cook on a picnic table or our roll-out table.

Most of the time I leave all that stuff at home for grocery getting and I don't get the Westy lefty lean. :-)

Nothing against full Westys, of course, but it's not what we needed.
